FISH TACOS

Ingredients

Vegetable oil (for frying)
1 ½ cups coleslaw mix
1/3 cup Creamy Vidalia Onion & Poppy Seed Dressing
Juice of 1 lime, plus wedges for serving
8-10 small corn or flour tortillas
1/2 cup all-purpose flour
2 tsp. Mexican Fiesta Rub & Seasoning
Salt & pepper, to taste
8-10 skinless fish fillets, cut into 2" x 1/2" pieces (pickerel, tuna or any white fish works)

Sauce:
¼ cup Awesome
Everything Sauce
¼ cup mayonnaise
1/3 cup fresh cilantro,
chopped

Instructions

Heat about 3" vegetable oil in a medium pot over medium-low heat until a deep-fry thermometer registers 375°F. Meanwhile, in a large bowl, toss the coleslaw mix with Creamy Vidalia Onion & Poppy Seed Dressing and lime juice. Warm the tortillas in a skillet over medium-low heat or wrap in a damp cloth and microwave for 25 seconds. Wrap in a towel to keep warm. Mix the flour, Mexican Fiesta Rub & Seasoning, salt & pepper in a shallow bowl. Dredge the fish in the flour mixture, then fry in batches until golden and just cooked through, 2-3 minutes. Transfer with a slotted spoon to a paper-towel-lined plate to drain. Season with salt. Combine Awesome Everything Sauce with mayonnaise and cilantro. Place the coleslaw on the warm tortilla shells, add sauce and top with cooked fish and more coleslaw.
